NATURAL FOOD COLORANTS FROM ALGAE
FeyeCon and Algae Biotech are working on the Colorants project, that investigates the production and exploitation of natural food colorants from algae. Because artificial food colorants are increasingly associated with serious health issues, the demand for natural food colorants is growing. Currently the available spectrum of natural colorants is limited. Extracting colorants from vegetables and fruits is possible, but is not preferred because they can be used as a whole food product. A new source of natural food colorants is algae. Algae are a natural source, fast growing and offer a wide spectrum of natural colors including all primary colors. In addition to extraction, the project investigates methods to prevent color degradation during processing, storage and in the end-products. By additionally preserving the natural anti-oxidants that algae contain, natural food colorants can be associated with added health benefits instead of health risks.
